APPLE & PLUM

Cinnamon Apple Jelly (NOT CURRENTLY AVAILABLE):
Ruby-red, clear, jewel-like jelly with NATURAL color. It's even better than the one you remember as a child. Working with fresh apples is very labor intensive - the apples are cooked whole, passed manually through a food mill, then dripped slowly through cheesecloth. But sooo worth it! A little sweetness is then added with the cinnamon stick, cooked slowly until done. Made with fresh home-grown apples, cinnamon bark and unrefined cane sugar. Simple and perfect.
Spiced Apple Butter:

A favorite and top seller.The apples come from our trees. They are cooked whole for flavor, passed through a food mill. Fresh cinnamon stick, ginger, allspice, cloves and a hint of cayenne are added, along with unrefined cane sugar and brown sugar. The mix is slowly simmered stovetop for a full EIGHT HOURS, stirred every TEN MINUTES to develop the rich layered flavor. You have never tasted apple butter like this! If making it is a zen experience, then it is totally worth it.
Plum Preserves:
Deep violet in color, these Damson plums give up all their slightly smoky, sweet , sunripened goodness to our delicious plum preserves. Delicate yet hearty, this satisfying, smooth spread is also scrumptious when stirred into stir fry or used as a glaze for ribs, pork, lamb, etc.

Strawberry Balsamic Marmalade: A top seller! VERY low in sugar. Highest quality strawberries from the Farmers Market are tossed with a little sweet-tangy balsamic vinegar. This is the trick that Italians know as it brings out all the sweetness and juicy flavor of the strawberries - and then necessitates only using the tiniest amount of sugar. Just -picked fresh fruit taste. Delicious on toast, divine on ice cream. Just strawberries, a little unrefined cane sugar, balsamic vinegar from Modena, Italy and a hint of fresh lime and lemon.

Spiced Pear Butter: Exceptional Bartlett pears from 100 year old trees give their flavor to this delicately spiced Pear Butter. 5 Spice Chinese spice mix, fresh ginger, allspice, cardamom, lime zest and juice enhance the natural sweetness of these rare heritage pears.

Peach-Ginger Preserves:
Like our smooth Silky Peach preserves, but with the added dimension - and perfect marriage - of resh ginger. The ginger is subtle, not overpowering, but gives an Asian flare to this classic favorite.

Apricot Preserves: A timeless favorite and top seller. Plump, juicy sun-ripe apricots from our trees, sugar, a little lemon juice and nothing else! You have never tasted apricot preserves like this. Cooking them without the pectin is the key - as well as the quality of the fruit.

Apricot-Ginger Preserves (NOT CURRENTLY AVAILABLE): A little ginger adds miles of depth and dimension to the sun-ripened tart-sweet taste of apricots. Mediterranean people know this well. Fresh Lime Marmalade w/Vanilla: If you love lime, this is the one for you. This unique marmalade has been a top seller! Many people say this is "Key Lime Pie in a jar." Fresh Fig Marmalade (NOT CURRENTLY AVAILABLE):
Sexy and delectable, this rare and LIMITED EDITION seasonal treat won't last long! People have been known to swoon when eating this with a mild , soft cheese like Brie, or goat cheese.
Loquat w/Grapefruit Marmalade:
Loquats originated in China. Although I had tasted them canned in sweet syrup, I had not tasted the fresh fruit until I was gifted some by friends with "overactive" loquat trees. When fresh, the flavor is fairly sweet but with a tropical tang. But to my surprise, when cooked, the fruit became honey-sweet - almost too sweet - even though I added only the minimum possible quantity of sugar. Working with my recipes, I found that the addition of grapefruit brought out the subtle delicacy and depth. A lovely marriage! This one is good on toast, in fruit salad, but also interesting as a glaze for chicken or duck. Might try it on ham too.
Pumpkin Butter: Fresh WHOLE pumpkins are roasted ( a delicious trick I learned in Italy!) and then slowly simmered for hours with lots of fresh ginger and other spices, to develop the flavors. Spread thickly on a bagel with cream cheese. Or cut a smnall squash in half, scoop out the seeds. Drizzle with a little olive oil and roast until fork tender. Serve alone or with some cream cheese and toasted nuts - yum!
Pumpkin-Orange-Ginger Preserves:
Our Pumpkin Butter with the addition of local oranges, which marries perfectly with the delicate yet hearty fall flavors. Great as a side to roasted meats or rice. Delicious - and decadent - in a simple baked sweet potato, with a little cream cheese. Use as a filling in ravioli. See our RECIPES PAGE for other easy and flavorful ideas!

Habanero Apple Jelly: First you taste the bright, naturally sweet taste of the apples - and then you get the kick! Medium spicy with delicious depth of flavor and with a gorgeous, clear ruby red NATURAL color. Great with cream cheese, but also amazing on chicken, turkey or ham sandwiches. Habanero Syrup: Would you like to add some delicious heat and a hint of sweetness to your food - whether sweet or savory - and not add an additional flavor? If so, this unique product is your answer. Everyone in the family can add their own level of heat. I was making this syrup to add to my preserves (Habanero Apricot, Habanero StTrawberry, etc.) and I found myself drizzling a little of the syrup onto most things I was eating - stir fry, omelettes, salad dressing, sandwiches, etc.
Then I had an epiphany - why not bottle this and offer the same flexible advantages to my customers? So, here you go! Put it in a squirt bottle, keep in the fridge, set it on the dinner table and you will have instant gratification when you want that addition of a bit (or a lot!) of heat. A definite "wow" for spicy-lovers for BBQ wings or chicken, spicy meat or even cheese fondue. Fresh Habanero chilis, unrefined cane sugar, pure cider vinegar.

Habanero Apricot Preserves NOT CURRENTLY AVAILABLE): Sweet and then with a little kick of heat. Some (like me) would call this a perfect marriage. There is just enough heat to liven things up, but not enough to burn out your palate. A little adventure, but sooo worth the voyage! Slightly hot to medium heat.

Habanero Strawberry Marmalade: The rich sun-kissed taste of strawberries with the magic of a little balsamic vinegar gets an additional surprise with a little heat! Another great relationship - sweet, a little heat and a lot of gorgeous flavor! You won't taste the balsamic, as it acts as a catlyst to bring out the flavor of top quality strawberries, with just a tiny bit of sugar. But you will understand what all the fuss is about.

Jalapeno Lime Marmalade: Intense and bright lime tang, the rich smokiness of fresh jalapeno peppers. This is no wimpy, marmalade with a few strands of peppers floating in green food coloring. It is impressively full flavored and tangy. Slather on top of cream cheese mixed with a little yogurt for a great party dip. Sensational as a glaze or condiment. Slightly spicy. CHOOSE FROM CHUNKY (with the pieces of rind) or SMOOTH VARIETIES.
Jalapeno Tangerine Marmalade:
The fresh taste of tangerine with a subtle bite. Our secret process keeps the bright taste of the fruit. Add a little kick of spice and this is a great base for a dip or a glaze.

Jalapeno Lemon Marmalade: Meyers Lemons are sweet and tangy. The fresh jalapeno peppers add a mild bite of heat. Try as a delicious base for a dip or a glaze.
Jalapeno Grapefruit Marmalade: Tangy with the slight bitter-sweetness of fresh grapefruit. The citrus marries well with the jalapeno, low-key spice-iness. Great on crackers and even better as a glaze for poultry.

Fresh Lime Basting Sauce: Our super fresh and tangy lime and tomato-base barbeque sauce that makes barbequing a breeze!

Simply put unseasoned fish, chicken or meat on the grill. Cook until there are only a few minutes of cooking time left (5-7 minutes for chicken, for example). Start basting with the sauce until done, turn the meat a couple of times and serve some warmed sauce on the side. The best BBQ chicken you will ever taste!

Habanero Citrus BBQ Sauce:If you like a citrusy flavor to your grilled meats, fish or chicken - AND a little heat too, but without the cloying sweetness - this one is for you! Medium spicy and a lot of depth of flavor. Made with a blend of fresh citrus, soy sauce, tomatoes, brown sugar and unrefined cane sugar. This will give you that beautiful carmelized finish without the overpowering sweetness.

Place UNSEASONED meat , fish or poultry on a hot grill. Grill until a few minutes are left in the cooking time, At that point, baste frequently and turn twice. Remove and enjoy!

Or sear UNSEASONED meat or fish. in hot skillet. Cook until 3/4 done. Add a generous dollop of Glaze. Add a few Tablespoons of water to dilute. Cook until meat or fish is done. Remove and keep warm while liquid reduces and thickens in pan. Serve and enjoy!

This sauce is tangy with an undercurrent of sweetness and subtle spices. Medium spicy and deep flavor. Made with a blend of fresh apricots, soy sauce, tomatoes, brown sugar and unrefined cane sugar and fresh ginger. Get the carmelized finish that enhances your grilling without any overpowering sweetness.

Make a "wow" coleslaw with this BBQ! sauce by chopping cabbage, carrots and green onions fine. Mix the Habanero Apricot BBQ Sauce with a little olive oil and lightly dress the slaw. A proven - and healthy - crowd pleaser.

This sauce is completely GLUTEN-FREE and also has no tomato. The complex flavor comes from a blend of five different roasted peppers.

Put your unseasoned fish, chicken or meat on the grill. Cook until there are only a few minutes of cooking time left (5-7 minutes for chicken, for example). Then baste with the sauce until done, turning a few times, and serve some warmed sauce on the side. Delicious! Try it on barbequed corn and other vegetables on the grill too.

We developed this Vinaigrette and a unique and easy salad recipe for a culinary demo at a college.
